Ingredients
- 16 oz Onions
- 4 tbsp Butter
- 1 tbsp Coarse Kosher Salt
- 1/4 tsp Ground White Pepper
- 1/4 tsp Ground Ginger
- 48 oz Parsnip
- 32 oz Bosc Pear
- 0 oz Water
- 2 tbsp Apple Cider Vinegar
Directions
heat butter over medium low heat, add onions, salt, pepper, and ginger, and sweat onions gently until soft and transparent. Add chopped parsnips and pears and continue to sweat gently over medium low heat until parsnips and pears have started to soften. stir frequently to prevent browning. Add water and increase heat, stirring occasionally until the liquid reaches a boil. Immediately reduce heat, cover and simmer until parsnips are very tender (about 20 to 30 minutes). Remove from heat and puree. Return to pot and adjust thickness with water. Heat until boiling and add cider vinegar, season to taste. Garnish with raisin gastrique.
