Party-Time Hummus Pizza

Hummus, the lovable Middle Eastern chickpea spread, is no longer just a dip — it can be used as a “sauce” for your pizza too. You won’t cook the hummus (yuck), you’ll simply bake the sesame seed-flecked pizza dough before adding any toppings.

INGREDIENTS

SERVES 12

  • 1/8 cup Whole Wheat Pastry Flour (100% Stone Ground)
  • 1 lb Whole Wheat Pizza Dough
  • 2 1/2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Seeds, sesame seeds, whole, dried
  • 1 cup hummus
  • 3/4 cup cucumber
  • 1/3 cup Red Onion Slices
  • 1/3 cup Grape Tomatoes
  • 1/8 tsp Sea Salt
  • 2 tbsp Harissa, Spicy
  • 2 tbsp Pine Nuts
  • 3 tbsp Parsley

DIRECTIONS

1 Place a stick-resistant large baking sheet, pizza pan or pizza stone in 500°F oven to preheat.
2 Lightly flour a clean kitchen surface. Shape dough by hand or with a rolling pin into a medium-size crust, about 10- to 11-inches round.
3 Carefully transfer the prepared dough to the preheated baking sheet. (Hint: Gently roll up dough over a rolling pin, then unfold onto the baking sheet.) Carefully brush with 1 1/2 tablespoons of the oil. Sprinkle with sesame seeds, gently pressing onto the dough to adhere.
4 Bake until the crust is crisp and brown, about 12 minutes.
5 Remove crust from the oven; let crust cool directly on a rack for at least 15 minutes.
6 Spread with hummus. Top with thinly sliced cucumber, onion, and grape tomatoes. Sprinkle with remaining 1 tablespoon olive oil, the salt, harissa (or desired amount of favorite hot sauce), pine nuts, and parsley. Slice into 12 appetizer-sized (or 4 large) pieces, and serve.
