Pasta with tomatoes, spinach and parmesan
Ingredients
- 1 tsp Extra Virgin Olive Oil
- 4 oz Whole Wheat Blend Penne Rigate
- 2 cups Grape Tomatoes
- 6 oz Baby Spinach
- 2 tbsp Grated Parmesan Cheese
Directions
1. Heat pasta in boiling water for specified time (c. 9-11 mins), adding baby spinach for the last 3 mins.
2. Drain and toss in olive oil.
3. Add halved grape tomatoes and warm over a low heat for 2-3 mins.
4. Serve with grated parmesan cheese.
