Peanut Butter and Cinnamon Baked Oatmeal

Baked oatmeal with peanut butter and cinnamon.
Ingredients
- 2 cups Old Fashioned Oats
- 1 tsp Ground Cinnamon
- 2 Eggs
- 2 cups Vanilla Soy Milk
- 1 cup Water
- 4 tbsp Natural Peanut Butter
Directions
Preheat oven to 375 F.
In large bowl, combine 2c. old-fashioned oats and 2tsp. of cinnamon.
In a medium bowl, beat 2 eggs and add 2c. vanilla soy milk, 1c. water, and 4tbs of natural peanut butter.
Add to oats and pour mixture into an 8X8in., greased baking dish.
Baking time depends on the consistency that you want. 20min for regular oatmeal consistency (runnier); 35min for a custard-like consistency; longer for a more solid consistency.
Top with some sort of sweetener (maple syrup, agave syrup, honey, etc) if desired.
