Peanut butter cottage cheese dip

Organic, cultured cottage cheese is used with a hint of peanut butter and cinnamon to make this healthful dip. For a low-cal pick-me-up on a busy day, pack 1/4 cup with a sliced apple or pear to snack on at work. The dip is not runny, so little fear of making a mess.

Ingredients

Directions

Place cottage cheese*, peanut butter and cinnamon in a blender or food processor. Cover and process until smooth. If you like it thinner, add 1-2 tsp skim milk.

Substitutions:
Use almond butter in place of the peanut butter.
Use apple pie spice in place of the cinnamon.

We have stored this successfully for up to a week.

*I use Nancy's Organic Cultured Low Fat Cottage Cheese, which is in the main food database, but not yet in the recipe data base
