Personal Panzanella (From Leftover: Stale Bread)

INGREDIENTS

SERVES 1

  • 1 tbsp White Balsamic Vinegar
  • 1 tbsp Extra Virgin Olive Oil
  • 1 garlic clove
  • 1/4 tsp ground black pepper
  • 2 whole-grain bread slice(s)
  • 3/4 cup Grape Tomatoes
  • 1/3 cup Long English Cucumbers
  • 1 shallot(s)
  • 15 leaf fresh basil leaves

DIRECTIONS

1 Whisk together the vinegar, oil, garlic, salt, and pepper in a medium bowl.
2 Add the bread (use day-old bread of any style), tomatoes, cucumber, and shallot and stir to combine. If possible, let stand at least 20 minutes at room temperature for ingredients to marry.
3 Toss with the fresh basil and serve.
