Directions

1. Whisk together the vinegar, oil, garlic, salt, and pepper in a medium bowl.

2. Add the bread (use day-old bread of any style), tomatoes, cucumber, and shallot and stir to combine. If possible, let stand at least 20 minutes at room temperature for ingredients to marry.

3. Toss with the fresh basil and serve.
