Tasty vegan pineapple cupcakes

Preheat oven to 350. Sift flour, baking powder, salt, and spices into a large bowl. Combine pineapple, oil, sugar, and vanilla in a blender and puree. Make a well in the centere of the flour mixtureand add the wet ingredients. Pour batter into cupcake liners and bake for 20-25 minutes.

Topping: Combine last four ingredients in a sauce pan and bring to a boil stirring constantly. Lower heat and stir for a minute. Immediately use a tablespoon to scoop the topping onto the cupcakes. Place in fridge for 30 minutes.
