Pizza “French Toast” Bruschetta (From Leftover: Cheese Pizza Slice)

INGREDIENTS

SERVES 1

  • 1 egg(s)
  • 3 tbsp 2% Milk
  • 1 slice Cheese Pizza!
  • 1 Plum Tomato
  • 3 leaf fresh basil leaves
  • 1/2 tsp extra-virgin olive oil
  • 1 pinch sea salt
  • 1 sec Cooking Spray, Extra Virgin Olive Oil

DIRECTIONS

1 Whisk together the egg and milk in a liquid measuring cup. Pour into a large food container or pan large enough to just fit the pizza slice. Add the pizza slice (use chilled leftovers!) and let soak 5 minutes per side.
2 Meanwhile, stir together the tomato, basil, olive oil, and salt in a small bowl. Set aside.
3 Spritz a large (PFOA-free) nonstick skillet with cooking spray and heat over medium. Add the egg-soaked pizza slice, cheese side down first. (Note: It’s okay to drizzle into the skillet some of the remaining egg mixture too.) Cook on both sides until gently browned and cooked through, about 4 minutes per side.
4 Top the pizza “French toast” with the tomato-basil salsa.
