1. Whisk together the egg and milk in a liquid measuring cup. Pour into a large food container or pan large enough to just fit the pizza slice. Add the pizza slice (use chilled leftovers!) and let soak 5 minutes per side.

2. Meanwhile, stir together the tomato, basil, olive oil, and salt in a small bowl. Set aside.

3. Spritz a large (PFOA-free) nonstick skillet with cooking spray and heat over medium. Add the egg-soaked pizza slice, cheese side down first. (Note: It’s okay to drizzle into the skillet some of the remaining egg mixture too.) Cook on both sides until gently browned and cooked through, about 4 minutes per side.

4. Top the pizza “French toast” with the tomato-basil salsa.
