Pumpkin Pie Oatmeal Parfait

A nutritional powerhouse, pumpkin infuses your oats with vitamin A and iron for immunity, plus enough fiber to make this a seriously filling start to your day. Greek yogurt adds just enough tartness to contrast with the warm spiciness of the oats, along with protein to nourish your muscles and encourage tissue repair.

INGREDIENTS

SERVES 1

  • 1/3 cup Rolled Oats
  • 2/3 cup Nonfat Milk
  • 1/3 cup Pumpkin Puree
  • 1 tsp Cinnamon, Ground
  • 1/2 tsp Cloves, Ground
  • 1/2 tsp Nutmeg (Ground)
  • 1/2 cup Greek Yogurt, Vanilla Nonfat

DIRECTIONS

1 Combine the oatmeal, milk, pumpkin and spices in a saucepan. Heat over medium heat, stirring continuously, until the liquid absorbs, 6-8 minutes. Remove from heat.
2 Add a spoonful of oatmeal to a parfait dish or small glass bowl.
3 Top with a spoonful of Greek yogurt, then continue adding alternating layers of oats and yogurt
4 Garnish with additional cinnamon or pumpkin pie spice, if desired, and serve immediately.
