This salad brims with quinoa, a good source of protein, vitamin E, calcium, iron and other nutrients. The tofu-based dressing adds a hearty boost of protein to give you lasting energy.

Ingredients

Directions

1. Place the tofu, juice from the limes, olive oil, vinegar, honey, salt and pepper into a blender and blend until smooth. Set aside.
2. Place the quinoa and fruits into a large bowl and combine with part of the dressing.
3. Place salad greens onto plates.
4. Put half of the fruit and quinoa mixture onto each plate.
