40 cloves chicken sounds impressive for what at first may sound like excess, but while the pungency of the garlic fades, the taste doesn’t.



1. Preheat oven to 375°F.
2. Toss garlic, carrots and celery with 2 tablespoons olive oil and season with salt and pepper.
3. Spread on a sheet pan and put in oven while preparing the chicken.
4. Completely coat 2 chicken thighs and 1 large chicken breast with 1 tablespoon olive oil. Season with salt and pepper.
5. Warm a large pan over high heat. When hot, add 1 tablespoon olive oil to coat bottom. Sear both sides of all pieces of chicken for 1 minute, then remove from pan and add to garlic, carrots and celery on sheet pan in oven.
6. Roast for 25 minutes, then turn pieces of chicken and toss vegetables. Brush 2 slices of baguette with olive oil and set in pan with vegetables. Cook everything for 10 minutes, then remove.
7. Crush or blend garlic, then spread across baguettes. Divide into 2 portions and serve.
