Roasted Beets

This recipe for roasted beets and beet greens is really easy and delicious!
Ingredients
- 2 lb Beets
- 1/4 cup Olive Oil
- 2 tbsp Minced Garlic
- 1 tbsp Salt & Pepper
Directions
1. Preheat the oven to 375 degrees. Wash the beets and beet greens. Leave the skin on the beets and cut into quarters or eigths depending on the size.
2. Combine the olive oil (set aside 2 tbsp), minced garlic, salt and pepper in a sturdy ziploc bag. Place the beets in the ziploc bag to coat them in the mixture.
3. Place the beets into a baking dish and put into the oven for 45 minutes.
4. When there are only 10 minutes left on baking time, heat up the 2 tbsp of remaining olive oil in a skillet over a medium heat. Add the garlic and saute. Place the beet greens (shredded to 4 inch pieces) to the skillet and saute until wilted.
