Roasted California Grape Guacamole

INGREDIENTS

SERVES 10

  • 1 cup California red seedless grapes
  • 1 tsp grapeseed oil
  • 2 whole Avocado
  • 2 tbsp 100% Lime Juice
  • 1/4 cup Red Onion
  • 1 Jalapeno Pepper
  • 3 tbsp fresh cilantro
  • 1 garlic clove
  • 1/2 tsp sea salt
  • 1/4 tsp ground cumin
  • 1/4 cup Shelled Pistachios

DIRECTIONS

1 TIP: You can use extra-virgin olive oil in place of the grapeseed oil and you can use ground coriander in place of cumin, if you like.
2 Preheat the oven to 450°F. Toss the fresh grapes with the oil and roast on a small baking pan until softened and caramelized, about 15 minutes. Set aside for at least 5 minutes to cool.
3 Gently stir together the grapes, avocados, lime juice, onion, jalapeño, cilantro, garlic, salt, and coriander in a medium bowl until just combined.
4 Cover and chill until ready to serve. Stir in the pistachios at serving.
