The vibrant color comes from the roasted carrots, which also adds a depth of flavor. For even more flavor, season the carrots with fresh rosemary or thyme or play around with the spices, depending on what you’re serving it with.

1. Preheat the oven to 350 degrees.
2. On a baking sheet, toss the carrots with 2 tablespoons olive oil and the salt, cumin and pepper flakes.
3. Cook until soft and lightly browned, about 20 minutes.
4. In a blender, combine the carrots and 1/4 cup olive oil and remaining ingredients until smooth. Continue to add water until you reach the desired consistency.
5. Serve with pita chips, vegetables or use as a spread.
