Roasted Carrot Hummus

Roasted Carrot Hummus

The vibrant color comes from the roasted carrots, which also adds a depth of flavor. For even more flavor, season the carrots with fresh rosemary or thyme or play around with the spices, depending on what you’re serving it with.

INGREDIENTS

SERVES 6

  • 1 lb Whole Carrots
  • 1/3 cup Olive Oil, Extra Virgin
  • 1/2 tbsp Ground Cumin
  • 1 tsp Red Pepper Flakes
  • 1 garlic clove
  • 2 tbsp Tahini
  • 1/2 cup water
  • 1 pinch Salt

DIRECTIONS

1 Preheat the oven to 350 degrees.
2 On a baking sheet, toss the carrots with 2 tablespoons olive oil and the salt, cumin and pepper flakes.
3 Cook until soft and lightly browned, about 20 minutes.
4 In a blender, combine the carrots and 1/4 cup olive oil and remaining ingredients until smooth. Continue to add water until you reach the desired consistency.
5 Serve with pita chips, vegetables or use as a spread.
