Roasted Cauliflower Tacos With Avocado Cream

These delicious tacos feature a surprising and delicious ingredient: roasted cauliflower florets. Dress up the tacos with a dollop or two of avocado cream, which is loaded with heart-healthy monounsaturated fatty acids.

INGREDIENTS

SERVES 4

  • 1 head medium Cauliflower, raw
  • 1 tsp chipotle chili powder
  • 1 tsp ground cumin
  • 1 tsp Sea Salt
  • 1 tbsp Lime Juice
  • 3 second Cooking Spray, Olive Oil
  • 8 Small Corn Tortillas
  • 1 cup Purple Cabbage
  • 1/3 cup fresh cilantro

DIRECTIONS

1 Preheat the oven to 400 degrees Fahrenheit.
2 Coat baking sheet with cooking spray.
3 In a medium bowl, whisk together chipotle powder, cumin, salt, lime juice and olive oil.
4 Add cauliflower florets and coat well.
5 Place the cauliflower florets in a single layer on the baking sheet and roast for 30 minutes or until tender.
6 For crema, blend avocado, Greek yogurt, lime juice, cilantro, salt and pepper in a food processor until smooth and creamy.
7 Assemble tacos with tortillas, roasted cauliflower and red cabbage. Drizzle with avocado crema and top with cilantro.
