These delicious tacos feature a surprising and delicious ingredient: roasted cauliflower florets. Dress up the tacos with a dollop or two of avocado cream, which is loaded with heart-healthy monounsaturated fatty acids.

1. Preheat the oven to 400 degrees Fahrenheit.

2. Coat baking sheet with cooking spray.

3. In a medium bowl, whisk together chipotle powder, cumin, salt, lime juice and olive oil.

4.Add cauliflower florets and coat well.

5. Place the cauliflower florets in a single layer on the baking sheet and roast for 30 minutes or until tender.

6. For crema, blend avocado, Greek yogurt, lime juice, cilantro, salt and pepper in a food processor until smooth and creamy.

7. Assemble tacos with tortillas, roasted cauliflower and red cabbage. Drizzle with avocado crema and top with cilantro.
