Directions

1. Preheat the oven to 450°F. Toss green beans with 1 tablespoon of the olive oil and 1/2 teaspoon of the salt on a large rimmed baking sheet. Arrange beans in a single layer.
2. In a large bowl, toss together the mushrooms, onion, black pepper, and remaining 1 tablespoon olive oil and 1/2 teaspoon salt. Arrange on top of the green beans.
3. Roast until green beans and mushrooms are gently browned and tender, about 35 minutes; do not stir during roasting. Adjust seasoning.
4. Transfer the vegetables to a casserole-style serving dish. Immediately sprinkle with the blue cheese (or vegan cheese alternative), and serve.
