Roasted Green Beans, Mushrooms, and Onion

Fresh green beans, baby bellas and red onions are roasted with olive oil to rich-tasting perfection. Recipe and image courtesy of Jackie Newgent, RDN.

INGREDIENTS

SERVES 6

  • 1 lb Green Beans, Cut
  • 2 tbsp extra-virgin olive oil
  • 1 tsp sea salt
  • 1 lb Mushrooms, Sliced Baby Bella
  • 1 medium red onion
  • 3/4 tsp ground black pepper
  • 1/3 cup Crumbled Cheese, Blue

DIRECTIONS

1 Preheat the oven to 450°F. Toss green beans with 1 tablespoon of the olive oil and 1/2 teaspoon of the salt on a large rimmed baking sheet. Arrange beans in a single layer.
2 In a large bowl, toss together the mushrooms, onion, black pepper, and remaining 1 tablespoon olive oil and 1/2 teaspoon salt. Arrange on top of the green beans.
3 Roast until green beans and mushrooms are gently browned and tender, about 35 minutes; do not stir during roasting. Adjust seasoning.
4 Transfer the vegetables to a casserole-style serving dish. Immediately sprinkle with the blue cheese (or vegan cheese alternative), and serve.
