Roasted Rutabaga Fries

Substituting rutabaga for potatoes considerably reduces your caloric intake. One 120-gram serving of french fries has upward of 365 calories, while 200 grams of rutabaga fries will net you about 75 calories. Mildly sweet, rutabagas are a cross between the cabbage and the turnip. They’re also a good source of fiber, zinc and vitamin C.

INGREDIENTS

SERVES 10

  • 1 medium Rutabagas, raw
  • 3 tbsp Vegetable Oil
  • 1 1/2 tsp Kosher Salt
  • 1 1/2 tsp Ground Black Pepper

DIRECTIONS

1 Preheat oven to 475°F.
2 Peel rutabaga.
3 Use a mandoline to cut in ¼-inch thick french fry spears.
4 Line 2 sheet pans with parchment paper.
5 Add 1½ tablespoons of oil to a large sealable plastic bag. Add half the fries, seal and toss to coat. Evenly space out one sheet pan and season with half the salt and pepper. Repeat with the rest of the fries.
6 Roast for 20 minutes then toss to turn over the fries. Return to the oven and check again in 10 minutes.
7 When fries are done, adjust salt and pepper seasoning and serve.
