Roasted Sweet Potato, Red Potato and Green Beans

This is one side dish that is yummy, quick, healthy and Kid Friendly. This can be served with Pasta or over Rice or can be eaten with Paratha or can be stuffed in a wrap. My 3 year old keeps asking to make this again and again.
Ingredients
- 2 medium Sweet Potato
- 2 red potato
- 1 lb Green Beans
- 1/2 medium White Onion
- 3 tbsp Roasted Potato Seasoning Mix
- 1/4 cup Olive Oil
- 1 tsp Salt
Directions
1. Take 1 tbsp Olive Oil in the non stick pan
2. Add the Thinly sliced Onions to the pan and saute for 2 min
3. Add the Salt and saute for 2 more min and Turn off the heat and keep it aside
4. In a mixing Bowl take remaining Olive Oil and mix the Seasoning and whisk it until it blends into the oil
5. Cut the Red Potatoes ( with skin) into small cubes and scrub the Sweet Potatoes and Cut them into small cubes
6. Just Cut the edges of the Green Beans leave them as it is
7. Take a 13 in Baking Pan and Toss together all the vegetables
8. Pour the Seasoning mix over the vegetables and toss them well
9. Set the Oven at 350 c and Keep this Baking Pan (don't have to cover) on upper rack for 50 to 60 min.
10. After taking it out sprinkle with fresh rosemary and let it cool for 10 min and serve.
