Rock'n Spinach Salad Dressing/Spinach Salad

This salad is named after the wonderful family who shared their family's favorite spinach salad recipe with us. The unexpected ingredient (Espresso) in the dressing is what makes the salad special. What you add to your fresh spinach is up to you. My family likes baby spinach, thin sliced red onion, minced garlic, chopped hard boiled eggs & BACON of course!
Ingredients
- 1/2 cup Real Mayonaise
- 1/4 cup Fine Granulated Sugar
- 1 tbsp Balsalmic Vinegar
- 1 tbsp Red Wine Vinegar
- 1/4 cup Espresso Shot
Directions
Whisk together the sugar & mayonnaise.
Add vinegars & espresso.
Whisk until well dissolved & blended. Allow dressing to meld for at least one hour in the refrigerator.
Drizzle the dressing over the spinach salad, toss to coat. Add optional sliced hard cooked eggs & bacon then serve right away.
