Root Vegetable "Fries"

A great, reasonably healthy substitute for those French fries that, deep down, we all love. Use sweet potatoes, parsnips, rutabaga, yellow squash, and/or zucchini to create and easy, baked, and satisfying exchange.
Ingredients
- 2 cups Roasted Parsnips
- 1 1/2 cups Roasted Sweet Potatoes
- 2 cups Carrots, Roasted
- 2 tbsp Olive Oil
- 1/4 tsp Sea Salt
- 1 tbsp Pepper, Black
Directions
Pre-heat oven to 425 degrees.
Wash your veggies and core them then cut into wedges. The softer veggies like the squash and sweet potatoes should be roughly twice the size as the harder, more dense vegetables like carrots to help even out the cooking.
Place veggies in large mixing bowl and add the olive oil, salt, and pepper then toss to coat evenly. Turn out on to a large cooking sheet that's been lightly coated with a vegetable cooking spray.
Place in middle rack of oven and bake for about 30-40 minutes or until vegetables turn a nice golden brown. Turn once during cooking.
To serve, stand veggies up in any wide-mouth coffee cup or glass.
