Root Vegetable Mash

Mashed Yukon Potatoes with Parsnips, Carrots and Turnips
Ingredients
- 1 1/2 lb Yukon Gold Potato
- 1 medium Parsnips (the True Count)
- 2 large Carrot, Raw
- 1/3 cup Chicken Broth (canned)
- 3/8 cup Half and Half
- 4 tbsp Butter
Directions
Melt butter and saute root vegetables until golden (about 10 minutes); add potatoes broth and 3/4 teaspoon salt and cook, covered, over low heat for approx. 30 min. (until potatoes fall apart when poked with a fork); remove from heat, remove cover, and let steam escape for 2 min; add warmed half-and-half and chives and gently mash.
