Directions

1. Heat the oil over medium in a large saucepan. Add the onion, vinegar, and 1/4 teaspoon of the salt, increase heat to medium-high, and sauté until the onion is softened, about 5 minutes.
2. Add the sweet potato, broth, pepper, and the remaining 1 1/4 teaspoons salt. Increase heat to high and bring to a boil. Reduce heat to medium, cover, and cook until the sweet potato is fully softened, about 22 minutes.
3. Puree the soup in batches in a blender until velvety smooth, using the hot fill line as a guide. Reheat, if need.
4. Stir in the rosemary, adjust seasoning, and serve.
