Ruth's Taco Soup

Taco soup Ruth N. made for potluck Sunday, Jan 31, 2010. It was very good.
Ingredients
- 16 oz Black Beans
- 16 oz Kidney Beans
- 8 oz Mexican Style Stewed Tomatoes
- 8 oz Italian Stewed Tomatoes
- 16 oz Canned Corn
- 1 oz Hidden Valley Ranch Salad Dressing Mix
- 1 envelope Taco Seasoning Mix
- 1 lb Ground Turkey
- 1 Onion, 1 Large - Cooked
Directions
The beans, tomatoes and corn are one can each. The ranch and taco seasonings are one packet each.
The onion starts out raw, but the only reasonable thing I could find in the LS data base was a cooked onion. Should be a white or yellow onion -- I like yellow because a little less irritating.
Chop the onion.
Brown the ground turkey with the chopped onion.
Drain fat away.
Mix in ranch and taco seasonings.
Drain beans and corn.
Put everything in a crock pot.
Heat until done.
The recipe Ruth sent me omitted the onion, but I found it in the Weight Watchers recipe (http://www.grouprecipes.com/32777/weight-watchers-taco-soup.html) and it seems like a good idea.
WW and Ruth claimed this is only two points per cup. However, the LS numbers have it at 181 calories and computes to over three points per cup. The LS data seem closer to the truth to me.
