Saag Paneer with Tofu

Fast and easy saag paneer using tofu
Ingredients
- 1 package Tofu (firm)
- 1 lb Chopped Spinach (frozen) 16oz
- 1/2 cup Fage Total
- 1/2 cup Half And Half
- 3 tbsp Organic Extra Virgin Olive Oil
- 1 tbsp Curry Powder
- 1 tsp Tumeric
- 3 Garlic Clove
- 1 tsp Ginger, Ground
Directions
Tofu should be well pressed; cut into 1 inch cubes.
Season with salt, garlic and saute in 1 T oil unitl lightly crisped. Set aside.
Heat 2T oil; add curry, turmeric, ginger. Add 2T water. Whisk in yogurt; add half and half. Add chopped spinach to sauce, stir to incorporate, simmer. Blend into rough paste. Turn back into warm pan, add tofu, stir together. Season to taste. Good with white basmati/jasmine or good bread.
