Sabina's Spicy Tuna Rice

Ingredients
- 2 tbsp Olive Oil
- 2 cups Onions
- 225 g Rice
- 200 g Tomatoes (tin Chopped)
- 2 cube Oxo Chicken Stock
- 2 tbsp Tomato Puree
- 198 g Corn
- 100 g Courgette
- 200 g Tinned Tuna
- 1 Red Chilly Pepper
Directions
STEP 1
Heat the oil in a pan and fry the onion until softened. Add the rice and fry for 1 minute. Add the tomatoes, stock, tomato purée, Chillies, sweetcorn and courgette. Simmer gently for 15-20 minutes until the liquid has been absorbed and the rice is tender.
STEP 2
Stir in the tuna 5 minutes before the end of cooking.
