Sally's Cheesey Zucchini

Like a twice baked potato, only with zucchini ... fresh garlic adds flavor as well!
Ingredients
- 100 g Zucchini Squash Raw
- 1/2 1/2 Roma Tomato
- 2 cloves Garlic Clove
- 7 g Real Bacon Bits
- 1/4 cup 2% Mexican Blend Chesse
Directions
Boil the zucchini, one per person, whole in a pot. Can be done early in day. Let cool to easily handle. When cool, slice longways for two long halves. Scoop out the cooked squash and chop. Place chopped squash in bowl. Add one or 2 chopped cloves of garlic per person. Add one-half chopped fresh tomato per person. Generously sprinkle with freshly ground black pepper. Add a serving of Hormel Bacon Bits per person. Blend. By spoonfuls, add mixture back into the zucchini halves. Sprinkle with the 2% grated cheese. Back 20 minutes at 350.
My hubby likes with a couple of dashes of hot sauce.
