Sally's Low Cal Eggnog

A very low sugar version of traditional eggnog. Lower calorie too! Using stevia as sweetener and Almond breeze instead of milk. Adding fresh vanilla bean and freshly ground nutmeg adds more flavor!
Ingredients
- 4 egg yolk
- 1/3 cup Splenda
- 2 cups Unsweetened Original
- 1 cup Whole Milk
- 4 large Egg White
Directions
Beat by hand with a whisk or a hand mixer beat egg yolks until thinner, paler in consistency. If using fresh vanilla bean seed add now. Slowly add in the Splenda. Then add Almond Breeze and cream(or whole milk). Chill. Whip the egg whites and then fold into the egg/milk mixture. Add brandy, bourbon, spiced rum as you desire. Grate fresh nutmeg over each cup.
