Taking a typical old-fashioned meat loaf recipe, and bringing it into the 21st Century! Healthier!

Ingredients

Directions

Heat oven to 350 degrees. While heating, mix all ingredients. If desired, use fresh onions. Adding chopped green peppers or red bell peppers is something many like. If using a metal loaf pan, spray sides and bottom with Pam, not necessary if using a pyrex loaf pan. I shape my loaf to be clear of the ends, so that juices can accumulate.

Bake for 1 1/2 hours at 350. Every 30 minutes, I remove from oven and pour off juices. (Using a turkey baster an easy way to remove excess juices) During last 30 minutes I drizzle either ketchup or barbecue sauce over the top of loaf.
