Salmon Croquettes

Low-carb and very tasteful. Makes 6 large croquettes using 1 large can of pink salmon.
Ingredients
- 2 1/4 cups Traditional Style Pink Salmon
- 4 Eggs
- 1/2 cup Shreaded Sharp Cheddar Cheese
- 4 tbsp Parmesan Grated Cheese (100%)
- 2 tbsp Extra Virgin Olive Oil
- 1 tsp Spices, Celery Salt
- 1/2 tbsp Onion Powder
- 1/2 tsp Ground Black Pepper
Directions
Uses 1 large can of salmon. - Mix all of the ingredients in a small bowl; chill at least 30 minutes. Heat griddle or large skillet to medium heat and coat with non-stick spray. Use a large cooking spoon to measure individual servings. Drop the salmon mixture from spoon to one hand and form into a patty shape. Fry about 3-4 minutes on each side until well-browned. Flip them very gently (not too soon!) and brown the other side.
