This recipe is a great solution for getting a well balanced dinner that's healthy and quick!

Ingredients

Add 1/4 tsp of lemon pepper and a tbsp. of extra virgin olive oil in a skillet and place the salmon fillet on top. On med. heat let the salmon cool for 3 mins each side (a little longer if it's frozen) until it's a pale pink.

Put 1/4 cup of rice in the rice cooker and 1/2 cop of water. Cook for 20 mins and fluff. Once it's ready, serve on a dish rice first and lay the broiled salmon on top.

The salad is easily tossed in a bowl with a few tablespoons of dressing and served as an appetizer or on the side! Awesome meal for one and a great source of protein after a workout.
