This bowl is perfect for summertime, with its assortment of stone fruits (fruits that have a large pit in the center). It's less sweet than one made with mango, and using a less-than-juicy-ripe nectarine or peach is fine.

Ingredients

Directions

1. Add a dash of orange blossom water to the cooked jasmine rice and place in a serving bowl, keeping it to one side of the bowl.
2. On the lighter/emptier side of the bowl, place one cup greens.
3. Mix all remaining ingredients except enochi mushrooms in a mixing bowl until well combined, taking care to not smash avocado.
4. Place salmon mix atop rice and greens.
5. Add enochi mushrooms, bunched, on one side.


Notes:

You can sub in spring mix greens instead of microgreens
You can sub in peaches, apricots or use a mix of nectarines, peaches and apricots
You can sub in algae oil or any other neutral oil for canola
For cayenne pepper, you can use any fresh minced red chile, such as cayenne or Fresno
