Sausage, Egg, & Veggie Casserole

Ingredients
- 4 link Turkey Sausage - Sweet Italian
- 1 tbsp Olive Oil
- 1 1/2 tsp Extra Light Olive Oil
- 2 cups Baby Spinach
- 1 cup Zucchini Raw
- 1/2 cup Sweet Red Peppers
- 1/2 cup Red Onion
- 1/4 tsp Salt
- 1/4 tsp Ground Black Pepper
- 7 egg
- 1/2 cup Light Original Soymilk
- 1/4 cup Colby-jack Cheese
Directions
Preheat oven to 350. Coat an 8 x 8 baking dish with cooking spray.
Remove casing from sausage and cut into 1" pieces. Cook in a large skillet over medium-high heat until half cooked - about 6 to 8 minutes - stirring occasionally. Spread sausage over the bottom of the prepared baking dish.
Discard the fat in the skillet. Add the oil to the skillet and stir in the spinach, zucchini, pepper, onion, salt & 1/8 teaspoon of pepper. Reduce heat to medium. Cook stirring occasionally until the veggies are tender & liquid evaporates - about 8 to 10 minutes. Let cool for 10 minutes and arrange over the sausage.
In a large bowl, combine eggs, milk, cheese and 1/8 teaspoon pepper. Pour over the veggies.
Bake until eggs are set - about 40 to 45 minutes. Cut into squares and serve.
