Sauteed Green Beans with Almond Slivers

This an easy to make sure to please salad variation. Fresh green beans, tomatoes and lemon are loaded with nutrients and flavor.

Ingredients

Directions

Blanch the green beans.
Boil salted water in a medium/large pot.
Have green beans prepped - cut off ends, and cut in half or keep whole.
Have a large bowl of ice water ready.
Boil green beans for 8-10 minutes.
Remove green beans and place in ice water bath to stop the cooking process and keep their gorgeous green color.
Drain.

Add 1 Tbsp olive oil to sauté pan over medium heat.
In a salad/mixing bowl, combine green beans and drizzle with remaining olive oil, toss. Sprinkle with salt and pepper. Add lemon juice, toss. Add in almonds, toss and serve.
