Savory oatmeal takes a spin on your traditional bowl of oatmeal. It's prepared with vegetable broth, scallions and edamame, so you’ve got a winning combination of soluble fiber and protein to make you feel full. That’s served with red bell pepper, which is sauteed until caramelized, along with wilted baby kale and fresh tangy goat cheese.

1. In a medium saucepan, bring broth, scallions, and 1/2 teaspoon salt to a boil. Stir in oats and bring back to a boil.
2. Add edamame, reduce heat to medium-low and simmer uncovered, stirring occasionally, until cooked through and liquid is absorbed, about 20 minutes.
3. Meanwhile, in a large stick-resistant skillet, heat 1 tablespoon oil over medium-high. Add bell pepper and sauté until lightly browned, about 8 minutes. Top with the kale and 1/8 teaspoon salt; cover. Remove from heat and let stand covered for at least 5 minutes to allow kale to wilt.
4. In a liquid measuring cup, whisk together lemon juice, remaining 1 tablespoon oil, and 1/8 teaspoon salt. Set aside.
5. Stir dill into the oatmeal mixture. Arrange among two bowls the oatmeal mixture, kale, and bell peppers. Adjust seasoning.
