Delicious low fat soup that is healthy and easy to make.
Ingredients
- 1/2 tsp Oregano
- 1/2 tsp Basil (dried)
- 1/4 tsp Spices, Cayenne Pepper
- 1/4 tsp Ground Cinnamon
- 1/2 cup Scallion Cream Cheese
- 1/4 cup Parsley
- 1/2 cup Whole Wheat Couscous
- 4 pieces Artichoke Hearts
- 7 oz chickpeas, canned, cooked
- 1 cup Zucchini Green
- 3 cups Low Sodium Chicken Stock
- 14 1/2 oz Diced Tomatoes
Directions
Bring stock plus 1 cup water to a rolling boil. Reduce heat, add remaining ingredients, and simmer uncovered about 5 to 7 minutes. Add salt and pepper to taste, and serve.
