Directions

1. Bring the water, lemon juice, and salt to a boil in a large saucepan.

2. Stir in the oats, zucchini, scallion, and olive oil and reduce heat to medium. Cook, while stirring occasionally, until the oats and zucchini are fully cooked, about 6 minutes. Remove from heat and stir in the hemp seeds. Add additional salt to taste.

3. Transfer the oatmeal to individual bowls and sprinkle with the dill. (Hint: If desired, sprinkle with red hot pepper for “heat” and color.)

4. Enjoy with a cup of black tea or coffee.
