Sawyer's Naked Vegan Burrito

Who would not want to eat Sawyer's Naked Vegan Burrito? Part of the LOST Supper series, served during the Sawyer-centric Season 6 episode RECON. A naked burrito is just a burrito without a wrapper. You add more rice instead. For this evening's dinner I used Trader Joe's Brown Rice Medley, but you can use any rice.

INGREDIENTS

SERVES 4

  • 1 cup Brown Rice Medley
  • 4 oz Soy-sation Shredded 3 Cheese Blend
  • 1 cup Refried Black Beans With Jalapeno Peppers
  • 140 g Soy Chorizo
  • 8 tbsp Hot & Smoky Chipotle Salsa
  • 2 1/2 cups Broccoli Slaw, Organic

DIRECTIONS

1 * Cook the rice and set aside.
2 * In an individual serving bowl, place about 3/4 cup of rice
3 * Add about 1/4 cup of refried beans
4 * Sprinkle some soy chorizo
5 * Top with 1 oz of Soysation cheese
6 * Stick the bowl in the microwave and nuke on high for one minute.
7 * Remove bowl from microwave and top with salsa
8 * Add broccoli slaw on top
9 * Serve immediately
10 Obviously you can use your favorite rice, cheese or cheese substitute, meat or meat substitute instead. The crunchy broccoli slaw (it's just shredded broccoli and carrot) gives a nice texture.
