Scallops Provencal Style

Scallops in butter and herbs. Sauted to perfection with a delicate wine.
Ingredients
- 1 lb Bay Scallops-raw
- 1/4 cup Unbleached White Bread Flour
- 4 tbsp Butter
- 1/2 cup Shallots
- 1 Garlic Clove
- 1/2 cup Parsley
- 4 oz Sauvignon Blanc - 1 Oz
- 1 whole yiel LEMON Juice, Fresh Squeezed
Directions
season scallops with salt and pepper, dredge in flour. Heat 2 tbs of butter in large saute pan, on medium heat, add scallops and brown on one side. turn over and brown other side. should take 4 minutes tops. add the rest of the butter to the pan, then add shallots, garlic, and parsley. saute for 2 more minutes, add the wine and cook for 1 minute. taste to adjust seasoning. serve hot with a squeeze of fresh lemon juice.
