Scrambled eggs with Tomatoe, Apetina, Mushroom

It's a 10 minute recipe, with low carbs. Fits South beach diet's 1st phase.
Ingredients
- 2 Eggs
- 100 g Button Mushrooms
- 10 g Red Onion
- 5 g Light Feta
- 1/3 Tomatoes
Directions
1. Prepare the ingredients
- finely chop the red onion
- wash and slice the mushrooms
- beat up the egg with a pinch of salt.
- slice up tomato evenly
2. Making scrambled egg
- brush a non-stick pan slightly with olive oil and heat it up
- add onion and mushroom
- when the onion becomes glassy and the mushroom lets out some of it's juice pour the egg on it.
- Scramble it with wooden spoon until it's ready.
- Serve it with the tomatoes and apetina cheese. Add herbs and spices to your taste (I usually use tricoloured pepper and oregano).
