White Beans & Spinach - Nona's Sephardic Recipe

Hearty traditional Sephardi-Jewish dish with all the good Mediterranean stuff
Ingredients
- 1 lb Great Northern Beans
- 1 lb Chopped Spinich (frozen)
- 1 cup Extra Virgin Olive Oil
- 2 tsp Garlic Powder
- 2 cups Yellow Onion
- 2 cups Red Onion
- 4 oz Canned Mushrooms
- 14 oz Stewed Tomatoes
- 8 cups Organic Hearty Vegetable Broth
- 10 cloves Fresh Garlic
Directions
Soak the beans overnight in cold water. Sauté onions in olive oil until transparent. Add the rest of the ingredients in a large pot and bring to a boil. Simmer covered for at least four hours.
