Shepherd's Pie

Vegetarian version of a favorite recipe
Ingredients
- 1 tsp Pure Olive Oil
- 2 Vegan Burgers
- 1/4 cup Onion, Chopped
- 4 cups Mixed Vegetables-frozen
- 15 1/2 oz Italian Style Stewed Tomatoes
- 3 White Potatoes Whole
- 1/2 cup Fat Free Skim Milk
- 1/2 cup Cheddar Style Cheese
Directions
Preheat oven to 400 degrees. Defrost the Boca Burgers; using a fork break up the burger. Clean potatoes and boil on the stove top. Brown the burgers and onion in a medium skillet with the olive oil. Gently thaw the vegetables and add tomatoes to skillet mixture. Cook 5 minutes. Turn mixture into a casserole. Drain the potatoes and mash with milk. Cover meat mixture with potato; sprinkle with cheese. Bake 10 - 15 minutes until cheese and potatoes are browned and bubbling.
