Shepherd's pie

ground turkey and frozen vegetables, topped with mashed potatoes
Ingredients
- 20 oz Ground Turkey
- 6 2/3 cups mixed vegetables (frozen)
- 2 medium Yellow Onion
- 100 g Celery
- 6 average potato
- 4 tbsp Smart Balance Omega
- 1/2 cup Milk-1%
- 4 tbsp Grated Parmesan & Romano Cheese
- 1 1/4 cups Beef Consommé
- 0 cup Flour, All Purpose
- 1 tbsp Omega Cooking Oil
Directions
Prep mashed potatoes: peel, boil and mash potatoes with milk and butter.
In separate pan, brown turkey in oil. Add onion and celery and cook til veg start to soften. Add frozen veg and cook to heat through. Add flour and stir, cooking a minute or two. Add consomme and continue to cook until it thickens.
Transfer turkey/veg mixture to 13 x 9-inch pan sprayed with non-stick spray. Top with potatoes. Sprinkle cheese over top and bake 25-30 min at 375 or until top is lightly golden.
