Shrimp & Cheesy Grits

Cheesy grits topped with shrimp, corn, and bacon.
Ingredients
- 4 cups Great Value Quick Grits
- 3/4 cup Reduced Fat Sharp Cheddar (shredded)
- 1/2 cup Evaporated Lowfat 2% Milk
- 1 lb Extra Large Raw Shrimp 26/30 Count
- 1 cup Gold And White Corn
- 2 pan fried slices Premium Center Cut Bacon
- 1/2 tbsp Butter
- 2 tbsp Garlic Minced
- 1 tbsp All Purpose Flour
- 2 tbsp Tomato Sauce
Directions
Peel shrimp and season if desired. Cut bacon slices into tiny pieces.
Cook grits according to directions on package. Just before they are done, add evaporated milk, a splash of hot sauce (or tabasco) and shredded cheddar. Stir until smooth and creamy. Simmer on low heat for 5 minutes.
Fry bacon on medium heat until crispy. Remove bacon and set aside. Drain off some of the bacon fat; leave a very thin coating. Add butter and garlic. Add shrimp and flour. Add tomato sauce. Add corn. Saute until shrimp are cooked/pink. Slowly add 1/2 to 1 cup of water to pan to dissolve crust at the bottom of the pan and stir until sauce thickens. Simmer on low heat for 5-8 minutes until cooked through.
