Shrimp Lentil Soup

Nutrient Rich Lentil Soup with Shrimp
Ingredients
- 8 oz Raw Shrimp
- 2 Whole Carrots
- 2 medium stalk celery, raw
- 1 medium onion Vidalia
- 1 Jalapeno Pepper
- 1 cup Green Lentils
- 5 cups Homemade Vegetable Broth
- 2 tbsp Pure Olive Oil
- 4 cups Cabbage, Red, Raw
Directions
1)Heat 2 Tbl. Olive Oil in a large pot over medium heat
2)Add chopped onion, carrot, celery, pepper, and jalapeno
3)Add 2 Tbl. salt and 1 Tbl. pepper to saute
4)Saute for 5-8 minutes
5)Add 1 Cup of green lentils and stir up mixture
6)Saute mixture 3 to 4 minutes
7)Add 5 cups homemade vegetable broth
8)Bring to a boil and turn heat to low and cover
9)Let cook, covered, for 30 minutes
10)Add chopped red cabbage and let cook, covered, another 10 minutes
11)Uncover and add 8 oz. raw shrimp and stir for 5 minutes
