Shrimp Pasta with Creamy Chipolte Sauce

An easy and quick shrimp recipe that will warm you up on chilly days.
Ingredients
- 16 oz Linguine Pasta
- 1 tbsp Pure Canola Oil
- 1 medium Yellow Onion
- 3 Garlic Clove
- 1 cup Mushrooms-sliced
- 4 Plum Tomato
- 2 tbsp Chipolte Peppers 7oz Can
- 1 tsp Adobo
- 1/2 tsp Ground Cumin
- 15 oz Shrimp: Large
- 2 tsp 100% Juice Lemon Juice
- 1 1/2 cups Half-n-half
- 1/4 cup Cilantro
Directions
1. Boil the pasta in a large sauce pan. Drain and set aside.
2. Heat the oil in a large frying pan on medium heat, saute the onions stirring occasionally for 2 minutes or until wilted. Stir in the garlic, mushrooms, tomatoes and cumin. Saute for an additional 3 minutes.
3. Reduce the heat to medium-low and stir in the chipolte peppers (1-3 diced), shrimp, lemon juice and half-and-half (or light cream). Summer until the shrimps are just cooked through, approximately 3-5 minutes. Stir in the cilantro. Taste and correct the seasoning by adding salt, pepper and if needed additional chipolte to suit your taste.
4. Return pasta to the sauce pan in which it was cooked in, sprinkle with parmesan cheese if desired, and pour the shrimp and sauce over it. Toss until well blended.
