Simple Spaghetti Squash with Pesto

Swap out regular pasta for spaghetti sqaush and you'll slash calories in this typically decadent dish.

INGREDIENTS

SERVES 2

  • 1 Spaghetti Squash - Whole
  • 1/3 cup Sauce, Traditional Basil Pesto
  • 1/2 tsp sea salt
  • 12 serving Grape Tomato
  • 2 tbsp pine nuts
  • 12 Fresh Basil Leaves

DIRECTIONS

1 Pierce the squash all over with a paring knife. Microwave the squash on high for 8 minutes on a microwave-safe dish. Turn it over and microwave until the squash gives slightly to pressure and can be easily pierced with a fork, about 4 minutes more. Let stand for 5 minutes.
2 Carefully halve the squash lengthwise. Remove the seeds and strands adhering to the seeds. Quickly scrape the squash flesh into a serving bowl, using a fork to separate the strands.
3 Immediately toss the warm squash strands with the pesto, salt, and half of the tomatoes.
4 Sprinkle with the remaining tomatoes, pine nuts, and basil leaves.
