Sizzling Steakhouse Salad

To make this healthy salad even better, go with grass-fed beef. It’ll have more heart-friendly omega-3s and vitamin E than its conventionally raised counterpart. And compared to conventional operations, grass-fed meat production is far better for the environment!

INGREDIENTS

SERVES 4

  • 6 cups Mesclun
  • 1 medium red onion
  • 2 cups Cherry Tomatoes
  • 2 Beef, Australian, grass-fed, loin, tenderloin steak/roast, boneless, separable lean and fat, raw
  • 1 second spray Organic Olive Oil
  • 1/2 tsp Sea Salt
  • 1 tsp Ground Black Pepper
  • 2 tbsp Crumbled Cheese, Gorgonzola
  • 2 tbsp Olive Oil, Extra Virgin
  • 1/4 cup Vinegar, Balsamic, of Modena

DIRECTIONS

1 Arrange mesclun, onion, and tomatoes onto individual plates or a large platter.
2 Heat a grill pan or grill over medium-high.
3 Spritz tenderloin (or sirloin) steaks with cooking spray; season with salt.
4 Grill steaks until medium rare, about 4 to 5 minutes per side. Let stand for at least 5 minutes to complete the cooking process.
5 Slice steaks into 12 strips each.
6 Arrange the steak on top of the salads. Sprinkle with black pepper and gorgonzola cheese.
7 Serve while steak is warm. Drizzle with oil and vinegar—or serve on the side.
