Skillet Gnocchi

It's requires several ingredients but is quick and easy to cook and tastes AMAZING!
Ingredients
- 1 1/4 tbsp Extra Virgin Olive Oil
- 16 oz Gnocchi
- 1 medium Yellow Onion
- 4 tsp Minced Garlic
- 1/2 cup Water
- 6 cups Chopped Spinach
- 15 oz Italian Style Diced Tomatoes
- 15 oz Butter Beans
- 1/4 tsp Ground Black Pepper
- 1/2 cup mozzarella cheese, part-skim, shredded
- 1/4 cup Parmesan Cheese
Directions
- Heat 1 Tbsp. olive oil in a LARGE, deep skillet over medium heat. Add gnocchi and cook until plump, soft, and starting to brown (about 7-10 min.) - then move to a bowl.
- Add remaining 1/4 olive oil and thinly-chopped onion to the pan (cook about 2 min.) Stir in garlic, then water. Cover and cook until the onion is soft (about 5 minutes). Add spinach and cook until it starts to wilt (about 2-3 minutes). Add tomatoes, beans, and pepper. Simmer.
- Add gnocchi, then sprinkle Parmesan and mozzarella over top. Cover and let cook until the sauce is bubbling and the cheese is melted (about 2-3 minutes).
