Skinny Chicken Cordon Bleu

Skinny Chicken Cordon Bleu? Can it be TRUE? This is a favorite with my kids, and fancy enough to serve for guests.
Ingredients
- 16 oz Skinless Chicken Breast
- 4 oz Jarlsberg Light Swiss Cheese
- 4 slices Honey Ham (deli Thin-sliced)
- 1 cup Panko Crumbs
- 1/2 cup Egg Beaters
- 2 tbsp grated parmesean cheese
- 2 tsp Prepared Dijon Mustard
Directions
Preheat oven to 350 F
Slice chicken breasts in half parallel to counter, making two wide thin pieces from each breast.
On each chicken breast half, spread a little mustard. Place a thin layer of the ham and one slice of swiss cheese torn in pieces to fit.
Roll the layered chicken from one end to the other, tucking in sides if possible or simply fold in half so that the chicken covers the ham and cheese. If needed, you may hold the breast together with toothpicks.
Place egg mixture in shallow bowl.
In another shallow bowl mix parmesan cheese with the Panko crumbs.
Add a dash of Salt and pepper if needed.
Dip the chicken in the egg wash, then dip in the crumb mixture.
It is best to do this quickly, and wash hands between making each chicken bundle.
Place these on a greased baking sheet.
Bake the chicken at 350 for 35 minutes for 40 minutes.
