Slow Cooker Lamb Shank

Easy slow cooker solution for lamb shank in a pinch with veggies. A full meal and DELICIOUS.
Ingredients
- 1 1/2 piece cooked Lamb, Leg, Shank Half
- 1/2 cup Onions
- 1/2 medium Sweet Potato
- 1/2 cup Cremini Mushrooms
- 1 1/2 cups Organic Diced Tomatoes (no Salt Added)
- 3 cups Brussels Sprouts, Raw
Directions
Roughly chop onions and sweet potatoes and place in bottom of crockpot. Rinse off lamb shank but save all the delicious fat. place in crockpot. Halve the mushrooms and brussels and add to the pot, with tomatoes on top. Place 1/4 cup of water on top if you will be away from the pot. Set to low for 8 hours. Enjoy like mad.
